KUE bakery has been creating elegant, delicious desserts and European style breads for the last seven years in Ubud. We make 14 different breads daily, (including wheat and glutin free), 23 types of hand crafted chocolates and truffles, plus croissants, cakes, pies, tartes and other delicacies!We have now expanded upstairs to include an open air café and lounge with a wide range of sandwiches, chemical free organic greens salads and light meals. All of our foods are made using fresh ingredients, low sugar, and no additives or flavor enhancers.Visit our café on Ubud's main road for afternoon tea daily from 2:00 to 5:30.Breakfast, lunch and dinner served daily from 9:00am to 10:00pm.

A few words about our breads

At KUE bakery we do all our baking on the premises. We are an artisan bakery that makes high quality products in small quantities. This approach enables us to make breads that require long fermentations and use complex bread making techniques.We make all our own wild yeast starters: white, organic wheat, rye and glutin-free rice and cassava - freeing us from the need to use artificially produced leaveners. Some of our yeast starters have been alive since the business initially opened in 2002, continually becoming more rich and flavorful as they develop over time.Fermentation is also important in developing the flavor and consistency of a bread. We use a variety of warm and cold fermentation methods, many of them requiring “resting” and shaping the dough for up to 16-hour periods, before baking.
Another component of our philosophy is using local ingredients and appropriate local technology to lessen our carbon footprint and lower costs. Products made on the island using Indonesian flours will be uniquely different from those made in colder climes using more refined flours and a less “hands on” approach.
